It's been a tough year for us as a family and I strongly believe Christmas is a time for enjoying the company of loved ones. White Lady Cocktail (Serves 1)

  • 50 ml Gin

  • 25ml Triple Sec

  • 25ml Fresh Lemon Juice

  • 2tsp Sugar Syrup

  • Ice

Put everything into a mixing jug to cocktail shaker and shake - sieve and drink!

 

TOP TIP

If you like a frog on the top, add in an egg white!

 

Sugar Syrup:

Dissolve 300g caster sugar with 150ml of water over a low heat. Leave to cool and keep a bottle in the fridge for over Christmas cocktails.

Easy Peasy Chocolate Ganache

Perfect to replace a Christmas Pud on the kiddies menu!

It's indulgent and decadent & feeds 10 people

​

Ingredients:

450g Dark Chocolate

5 Tablespoons Liquid Glucose baking section of supermarkets

5 tablespoons Rum

570ml double cream 

75g Biscoff Biscuits (Crushed)

​

On top:

Cocoa Powder to dust

Handful of Biscoff Biscuits

​

Line a 23cm/9inch cake tin with baking paper. The spring form tins with the pop up base work brilliantly for a recipe like this, but aren't a necessity!

​

  1. Sprinkle the crushed biscuits over the base of tin

  2. Break chocolate and put in a bowl with liquid glucose and rum 

  3. Put the bowl over a saucepan of barely simmering water and bring to boi

  4. Stir for 5-10 mins to melt into a smooth and glossy texture. Take off the heat and cool 

  5. Beat the cream till floppy, just before stiff speak stage

  6. Fold half chocolate mixture in, then fold this new mixture into the rest of the chocolate

  7. Once its all blended, put in the tin on top of the biscuit crumbs

  8. Cover with cling film & chill

  9. Leave overnight in fridge, then when its time to serve, serve with cream and a sprinkling of biscoff biscuits on the top. Deeelicious
